Over the coming weeks I will bring you some cooking tips and a number of inspiring, hearty winter warmer recipes to hopefully inspire your own recipes this winter.
This week I’m sharing my ‘How To’ guide on Parsnip, Chestnut & Thyme Soup:
What you’ll need:
1 diced Onion, 100g butter, 1kg fresh parsnips, peeled & sliced, 1.5ltr vegetable or chicken stock, 200ml fresh milk, 200ml fresh cream, 4 sprigs fresh thyme, 250g cooked chestnuts (and an added 4tbs chopped for garnish)
What you’ll need to do:
This is a really simple recipe and a real winter warmer. Firstly, you’ll need to chop your onion finely and, over a low heat, sweat gently in butter without colouring.
Remove from heat and add in your sliced parsnips, vegetable stock, milk and cream. Bring to the boil and then reduce heat to allow to simmer.
Once parsnips are softened, add thyme leaves and chestnuts.
Using a hand blender, blend until a smooth consistency is achieved and taste for seasoning
Serve hot with some chopped chestnuts for garnish
